"Absolutely wonderful Gluten free Orange Cake. It's super easy to make and easy to eat! Serve warm for Dessert or cold with Tea or Coffee."

Ingredients

  • 1 Orange
  • 1 Cup Sugar
  • 3 Eggs
  • 140g Oil
  • 1 1/2 Cups rice flour
  • 1 1/2 tsp Baking Powder

Preparation

  1. Roughly Chop the Orange (rind and all) and process in a Blender until fine.
  2. Add the Eggs, Oil, and Sugar and process.
  3. Transfer to a bowl and add the Flour and Baking Powder. Do not over mix.
  4. Pour into a greased cake tin and bake for 40mins at 180C.
  5. Enjoy!
